Note: The week of the Accreditation Friday and Saturday nights were fully booked and remained conversation friendly – There was a large (possibly loud group) dining in on the Wednesday night of the accreditation which has affected the readings – Wednesday evenings are normally quieter than Friday and Saturdays 😉

I had the pleasure of visiting for their $50 lunch menu, and it’s safe to say this is fantastic value – both for the food and the ambience.

Lunch kicked off with house-made bread served with whipped Del Boca butter – beautifully light and creamy. Next was a classic Caprese, fresh and vibrant, followed by the standout main: Wagyu beef with roasted potatoes and a rich red wine jus.

After trying this, there was no way I was not having their signature dessert – a playful dish that looks like bacon and eggs, but is actually a stunning combination of Zabaglione Cream, White Chocolate Foam, Salted Caramel, Almond Crumble & Caramelised Guanciale. Delicious and fun!

But what makes Sincero truly special – and ear-friendly – is the thoughtful acoustic design. Acoustic panels are cleverly placed throughout the space, making this fine dining without the din. Even with a full crowd, conversation flows effortlessly at busier times. Fellow diners have commended management on how comfortable the ambience was – no need to shout across the table, just relaxed chatter and the occasional happy sigh over the food.

Sincero balances modern Italian elegance with genuine hospitality, all while respecting your ears. Highly recommended for sound-sensitive diners or anyone who wants to actually hear their dining companion.

I had the pleasure of speaking to the owner, they get many compliments about the ease of conversation here, even when fully booked. But if sound sensitive, mid week dinner is your best bet.
